Rather than relying on a single source, our professionally trained chefs balance various ingredients to create an unforgettable spicy flavor. It all starts with fresh cucumbers from the most local, environmentally responsible farms possible. 

Gochujang–or Korean chili paste– adds the first layer of peppery heat from here. Chili oil is next while also adding a healthy source of fat, helping balance this low-calorie dish. Finally, crispy garlic and black and white sesame shake up the texture, only adding to this sharable plate.

Spicy Asian Cucumber Recipe for Home

After just a few servings of this delectable treat, you’ll scramble to make your own at home. Thankfully, the brilliant minds at Beyond Sushi are once again ready to serve!

Though our in-restaurant version of this treat benefits from carefully selecting various ingredients, that shouldn’t stop you. With this simplified version, you can easily dip your toes into the world of Asian cuisine and all it offers.

Ingredients

  • 1 pound of Japanese cucumbers
  • 3 tablespoons of rice vinegar
  • 1 tablespoon of soy sauce
  • 2 tablespoons of chili crisp
  • 1 teaspoon of sugar

Instructions 

  1. To start this simple recipe, prepare your cucumbers. Peel the cucumbers, and slice them thin. For extra care and flair, you can use a mandolin to complete this step. In doing so, you will slice the cucumbers extra thin, ensuring that even more flavor can saturate each slice. 
  2. In a medium bowl, combine the rice vinegar and sugar, stirring until the sugar is almost entirely dissolved. From here, toss the cucumbers in the mixture. Allow the cucumbers to soak in the vinegar for at least fifteen minutes. 
  3. Combine all the remaining ingredients into the bowl, and toss the cucumbers until they are evenly coated. 
  4. Place this bowl in the refrigerator to marinate. The longer the cucumbers soak, the more they will infuse with the spicy, salty flavors. Though this dish is ready to enjoy within the hour, we suggest making it a day in advance for the most enjoyable result possible!
