Top 3 Vegan Vegetable Stew Recipes

When making a stew, most chefs hope for thick, rich broth and ingredients that withstand a long cooking process. Most of the time, this is achieved through the use of heavy creams, fatty ingredients, and chunks of meat. Not only are the recipes listed below completely vegan, they are nutritionally dense, allowing you to eat to your heart’s content without falling into unhealthy dining habits!

Hearty Sweet Potato Stew

Often described as a “superfood,” sweet potatoes are one of the healthiest root vegetables you can incorporate into your diet.

For this stew, you’ll begin by roasting several sweet potatoes. Sautee these diced sweet potatoes along with onion, carrots, and garlic. Pour your vegetable broth into the pot, add a can of crushed tomatoes, then bring the mixture to a simmer. In the last moments before serving, toss in some leafy green veggies for a gorgeous pop of color.  

The acidity of the tomato base in this stew combines perfectly with traditional Mediterranean seasonings. We highly suggest taking advantage of black pepper, cloves, coriander, sage, and paprika to elevate this dish to a whole new level. 

Mushroom Stew

This stew finds its flavor from sauteed onions, carrots, celery, and, of course, a mix of your favorite mushrooms. Next, sprinkle flour over your veggie mixture, and stir until all your veggies have been thoroughly coated. Add chopped potatoes, along with any seasonings you prefer. Pour in enough vegetable broth to cover your veggies entirely, cover with a lid, and allow your soup to simmer until all the delicious flavors have melded.

Vegan Irish Stew

Traditional Irish stew is already full of vegetables. For this recipe, you’ll want to start by dicing carrots, red potatoes, celery, and mushrooms. The lamb typically seen in this pub food is easily substituted with soy chunks, soy curls, or seitan. 

For the broth, mix vegetable stock with a single 8-ounce Guinness.
