Seasoning Sushi Rice

Before attempting to make any vegan sushi recipe, you want to start with the foundation of any great roll: well-seasoned rice.

Start by ensuring that your rice is actually intended for sushi. Unlike typical, long-grain rice, sushi rice tends to be smaller and stickier, allowing the grains to better stick together and hold their shape. Cook your rice, then set it aside.

In a bowl, combine rice wine vinegar, sugar, and a pinch of salt together until the sugar has fully dissolved. Some choose to add a drizzle of vegetable oil, but ultimately, the final ingredients and proportions are up to you.

There are many ways to combine the seasoning and rice, but we suggest spreading the rice over a long, flat surface, like a baking sheet. This makes it easy to ensure that all your rice is fully coated without having to handle it too much, which can lead to a gummy finish.

Armed with an assortment of farm-fresh veggies and seasoned sushi rice, roll up your sleeves and get to work!

Avocado Cucumber Roll

With its blend of creamy avocado and crisp, sweet cucumber, this easy roll is a great place to start!

Begin by laying out your sushi rolling mat. If you don’t have one of these utensils, lay out saran wrap instead. Carefully spread out a thin layer of rice, and then cover it with a sheet of toasted seaweed. This base will form the first layer of most sushi rolls.

Thinly slice long strips of cucumber and carefully cover the entire center of the roll, leaving just the bare edges of the rice around the exterior exposed. Follow this with another layer of thinly sliced avocado.

Carefully roll the sushi together to form the traditional shape. If the rice has dried out, brush the exterior to help it become sticky enough to hold its shape once more. Gently squeeze the finished roll to help all the ingredients tightly seal together, then use a sharp knife to cut out the final slices.

Arrange on a plate and serve with a side of low-sodium soy sauce!

Tofu Sushi Crisp

This vegan sushi roll may take a bit of extra prep, but the final result is well worth the wait!

Start by pressing all the excess moisture from a block of extra firm tofu. Cut it into long, 1/ inch strips, coat it in a light layer of corn starch, then fry each strip until crisp. Set this aside to cool.

Prepare the base of rice and seaweed, as you did in the previous roll. Using the same process, pile this role with strips of fried sushi, crispy shredded carrots, vegan cream “cheese, and avocado. Then, roll up your finished product, slice, and enjoy!

The secret to this roll’s success lies in the use of “cheese” and avocado. When using heavier ingredients, like this fried tofu, a combination of softer, healthy fats helps bind the roll together and keep all the insides firmly pressed against one another.

Shitake Sushi

For a savory, protein-rich alternative to the typical cool, crisp roll, check out this shitake sushi option!

Start by sauteeing sliced shitake mushrooms in a drizzle of sesame oil. Toss in fresh garlic and cook together until the mushrooms are soft and aromatic. Carefully place your steaming shitake mushrooms over your sushi base, then roll as usual.

No other ingredients are necessary! These flavorful, “meaty” mushrooms hold all the flavor you need on their own, making for a simple yet memorable roll.
