Peanut Noodle Salad Recipe for Home

Ingredients
- 1 package of dry vegan rice noodles
- 1 cup of shredded red cabbage
- 2 cups of shredded carrots
- 1 cup of thinly sliced radishes
- 2 sliced scallions
- 1 bunch of cilantro
- 1 tablespoon of minced jalapeno
- 1/2 cup of roasted, crushed peanuts
- 5 “thumbs” of ginger
- 1 clove of garlic
- 1 large orange
- 3 limes
- 1/2 cup of peanut butter
- 1/4 cup of soy sauce
- 1/3 cup of agave nectar
- 1/ cup of sesame oil
- 1 teaspoon of cayenne pepper
Instructions
- To begin this recipe, prepare the rice noodles. This can be done following whatever instructions are available on the packaging. Keep in mind that this is a dish that begs to be personalized. Feel free to swap out these rice noodles for brown noodles or whatever variety you prefer.
- Next, blend the peanut sauce. In a food processor, combine the ginger, garlic, peanut butter, soy sauce, agave nectar, sesame oil, and cayenne pepper. Juice the limes by rolling them across a flat surface, cutting them in half, and squeezing the fresh juice into the food processor. Follow the same procedure to juice the orange into the food processor as well. Blend the ingredients together until they form a smooth, even sauce.
- In a medium bowl, combine the cabbage, carrots, radishes, scallions, and jalapeno. Remove the cilantro leaves from the bunch and place them in the bowl as well. If you prefer, you may also finely mince some of the stalks for extra flavor. Drizzle the vegetables with peanut sauce and toss until they are fully coated.
- Drain your cooked noodles, and once they cool, add them to your salad. Drizzle with a second layer of peanut sauce and toss them again to coat.
- Finally, sprinkle your salad with chopped roasted peanuts. From here, it is just a matter of adjusting the flavors to your personal taste! For extra heat, a dash of additional cayenne works wonders. For a saltier flavor, just a splash of soy sauce goes far.
